Night time boil.

Went out with the boy Sunday to check the taps and was a little nervous. We ended up with close to a 5 gallon bucket full of sap. If this flow kept up I would have been in trouble! Luckily Sunday night brought a good freeze and slowed the sap enough that I only ended up with 1.5 gallons of new sap today.


Stuck with 5 gallons in one day I knew I needed to boil it Sunday night because the temps in the 10-day forecast are looking good for sap flow. I fired up the grill and dropped my 5 gallons of sap to 1 gallon of sweet in about 3 hours with the temperature dipping to 30F when I stopped.


Finished boiling tonight at 9:30 PM. Added another 16 ounces of syrup to my supply. This brings the season total to right around 48 ounces.

The thing that still amazes me is how weather dependent the sap flows are. Not only temperature but amount of sunlight and amount of wind seem to be impacting flows.

Another note – the sugar content of this latest batch of sap is around 1.65% sugar content, which appears to be up from the last batch I processed.
